Nourishing Green tomatoes with Coconut



To make this quick, delicious and nourishing green tomatoes recipe you can use green tomatoes of any shape and size.



What you need and how much Green Tomatoes - 10 to 12 medium sized

Coconut - Fresh & grated - 3/4 cup

Almonds - Sliced - 3/4 cup

Oil - 2 tablespoons (I have used coconut oil)

salt - 2-3 pinches


Slice the green tomatoes to about ¼ inch thickness and about an inch width. When you pick the green tomatoes, choose the firm shiny ones. The ones I have used here are home grown.


On to a hot pan, add coconut oil. Once the oil is hot add the sliced tomatoes. When you hear the sizzle, sprinkle some salt. You don’t want these to turn mushy but have firm slightly crispy sides, so keep the heat between medium to high. Add some almonds. Pan fry both the sides to golden crispy. Just before serving, sprinkle some freshly grated coconut. And it done! Snack these on a warm day or a cold day, absolutely healthy and delicious… these Nourishing Green tomatoes with Coconut are unarguably refreshing and delectable!
